Carrot Halwa is a favorite dessert for many of us. During the winter season, making carrot halwa has become a popular trend. It’s also a perfect variation for sweet dishes during occasions like Shab-e-Barat. Moreover, carrot halwa is simple to prepare. Today, I’ll share the recipe for this delicious dessert. It’s an excellent option for dessert and can also be served as an afternoon snack. Let’s dive into the recipe!


Ingredients:

  • Carrot – 500 grams
  • Milk – 1 liter
  • Sugar – 150 grams (adjust to taste)
  • Ghee – 5-6 tablespoons
  • Cardamom – 2-3 (powdered)
  • Raisins and nuts – For garnish
  • Milk powder – 100 grams
  • Saffron – A pinch

Method:

Step 1: Prepare the Carrots
Wash the carrots thoroughly, peel them, and grate them finely.

Step 2: Boil the Milk
Pour the milk into a pan and bring it to a boil over medium heat. Let it simmer until the milk reduces to half its volume, then lower the heat.

Step 3: Fry the Carrots
In another pan, heat 2–3 tablespoons of ghee. Add the grated carrots and sauté on medium heat for 5–7 minutes until they become slightly soft.

Step 4: Combine Milk and Carrots
Add the boiled milk to the sautéed carrots. Mix well and cook on medium-low heat, stirring occasionally. Let the mixture cook until the milk reduces further.

Step 5: Add Sugar and Cardamom
Once the milk has reduced significantly, add sugar and powdered cardamom. Cook until the sugar dissolves completely and blends into the mixture.

Step 6: Add Saffron
Soak the saffron in a little warm milk and add it to the mixture. Stir well for a rich aroma and color.

Step 7: Add Remaining Ghee
When the halwa thickens, add the remaining ghee. Mix everything well and cook for another 5–7 minutes.

Step 8: Final Touch
Add milk powder, chopped nuts, and raisins. Mix well and remove from heat. Your delicious carrot halwa is ready to serve!


Tips:

  1. You can boil the carrots first if you prefer; the halwa will still taste delightful.
  2. To enhance the flavor, add grated coconut.
  3. For a creative twist, mash the boiled carrots and shape the halwa into barfis before serving.
