Typically, we enjoy Chinese vegetables at restaurants with fried rice, continental meals, or set menus. Nowadays, it’s even served at weddings. Ingredients:

  • Papaya: 1 cup (thinly sliced)
  • Carrot: 1 cup (thinly sliced)
  • Cauliflower: 1 cup (cut into small cubes)
  • Cabbage: 1 cup (thinly sliced)
  • Baby Corn: 2-3 pieces (cut into cubes)
  • Long beans: ½ cup (chopped)
  • Capsicum: 1 cup (red and green, cut into cubes)
  • Soy Sauce: 2 tablespoons
  • Tomato Ketchup: 1 tablespoon
  • Black Pepper Powder: 1 tablespoon
  • Chicken (solid): 1 cup (finely chopped)
  • Onion: ½ cup (large chunks)
  • Garlic: 2 cloves (minced)
  • Green Chilies: 3-4
  • Oil: ½ cup
  • Salt: to taste
  • Milk Powder: 2-3 tablespoons
  • Sugar: 1 tablespoon

Chinese Vegetable Cooking Method:

  1. Parboil Vegetables:
    Exclude the capsicum and lightly boil all the other vegetables in hot water for 3-4 minutes. Drain and set aside.
  2. Prepare Chicken:
    Heat oil in a pan and fry the chopped chicken with a pinch of salt and black pepper. Once cooked, remove the chicken and set it aside. Add a small amount of butter to the same pan.
  3. Cook Garlic and Capsicum:
    Sauté minced garlic in the butter. Add capsicum and stir-fry for a few minutes.
  4. Add Vegetables:
    Add the parboiled vegetables to the pan and stir-fry for a while.
  5. Add Sauces and Chicken:
    Mix in the soy sauce, tomato ketchup, black pepper powder, salt, and the pre-fried chicken. Stir well.
  6. Add Onion and Green Chilies:
    Toss in the chopped onion and green chilies.
  7. Add Water:
    Pour 1 cup of water into the pan and cook the vegetables for a few more minutes.
  8. Thicken the Sauce:
    Dissolve 2 tablespoons of cornflour in water and pour it into the pan. Stir until the sauce thickens.
  9. Finish with Milk Powder:
    Add a pinch of sugar and the milk powder. Mix well and remove the pan from heat.
