Hotel-Style Mixed Vegetables
Vegetables are not always our favorite dish, but hotel-style mixed vegetables can be an absolute delight when paired with roti, paratha, or rice. Even the kids in my family love eating paratha with this hotel-style veggie dish. Due to popular demand, I’ve prepared this recipe for you to try at home.
Ingredients for Vegetables:
- 1 cup raw papaya (cubed)
- 1 cup cauliflower (florets)
- 1 cup carrot (sliced)
- 1 cup cucumber (cubed)
- 1 cup sweet pumpkin (cubed)
- 1 cup pointed gourd (patal, cubed)
- 1 cup potato (cubed)
- 1/2 cup chickpea lentils (soaked)
Ingredients for Spices:
- 3 bay leaves
- 5 dried red chilies
- 5 green chilies
- 1 tsp ginger paste
- 1 tsp garlic paste
- 10–12 garlic cloves
- 1 cup chopped onion
- 1 tsp coriander powder
- 0.5 tsp cumin powder
- 0.25 tsp turmeric powder
- Salt to taste
- Oil (as needed for cooking)
- 1 tsp panch phoron (Bengali five-spice mix)
- 0.5 tsp whole cumin seeds
Method:
Step 1: Prepare the Vegetables
Wash all the vegetables thoroughly and place them in a pressure cooker. Add the powdered spices (coriander, cumin, turmeric), ginger paste, garlic paste, some chopped onions, green chili slices, and a little oil. Mix everything well with your hands.
Step 2: Cook in the Pressure Cooker
Sauté the vegetables for about 5 minutes. Add 1.5 cups of water, close the pressure cooker lid, and cook on medium heat until one whistle.
Step 3: Let It Rest
Turn off the heat and let the vegetables sit inside the pressure cooker for a while. The steam will help the vegetables cook perfectly.
Step 4: Prepare the Tempering
In a frying pan, heat 2–3 tablespoons of oil. Add chopped onions, minced garlic, bay leaves, and dried red chilies. Fry until the onions turn golden brown. Open the pressure cooker lid while the tempering is being prepared.
Step 5: Add Final Touches
Once the onions are browned, add the panch phoron and whole cumin seeds. Fry for a few seconds, then pour the tempering into the cooked vegetables. Mix everything gently.
And your hotel-style mixed vegetables are ready to serve!
Tips:
- Using a pressure cooker ensures the perfect texture and flavor for hotel-style mixed vegetables.
- For added flavor, you can finish the dish with a little butter.
- If you prefer, you can replace chickpea lentils with mung lentils.
