Ingredients:

  • For Marinating the Meat:
    • 1 kg meat (mutton or chicken)
    • 1 cup yogurt
    • 2 tbsp ginger-garlic paste
    • 1 tbsp lemon juice
    • 1 tsp turmeric powder
    • 2 tsp red chili powder
    • 1 tsp coriander powder
    • 1 tsp garam masala
    • Salt to taste
  • For Cooking the Rice:
    • 3 cups basmati rice (soaked in water for 30 minutes)
    • 6 cups water
    • 2 bay leaves
    • 2-inch cinnamon stick
    • 4-5 cloves
    • 3 green cardamom pods
    • Salt to taste
  • For Layering the Biryani:
    • 3 onions (thinly sliced)
    • 2 tomatoes (finely chopped)
    • A pinch of saffron soaked in ½ cup warm milk
    • ½ cup mint leaves, chopped
    • ½ cup coriander leaves, chopped
    • 4 tbsp ghee or oil
    • Fried cashew nuts and raisins for garnish

 Shahi Biryani Instructions:

  1. Marinate the Meat: Combine all the ingredients for marinating in a bowl. Coat the meat evenly with the marinade and let it rest for at least an hour or overnight.
  2. Cook the Rice: Boil water in a large pot. Add bay leaves, cinnamon, cloves, cardamom, and salt. Add the soaked rice and cook until it is 70% done. Drain and keep aside.
  3. Cook the Meat: Heat ghee or oil in a deep-bottomed pan. Fry the onions until golden brown. Add the tomatoes and cook until soft. Add the marinated meat and cook until tender.
  4. Layer the Biryani: In a heavy-bottomed pot, layer the cooked meat. Top it with half of the cooked rice. Add mint leaves, coriander leaves, saffron milk, and fried onions. Repeat the layers.
  5. Dum Cook: Seal the pot with dough to prevent steam from escaping. Cook on low heat for 25-30 minutes.
  6. Serve: Gently fluff the biryani and garnish with fried cashew nuts and raisins. Serve hot with raita or salad.
